Even today it's a popular method to start from a few bigger bodies of land, and then obscure them with smaller details, like peninsulas or bays.
Dorne is just Cornwall mirrored horizontally, then glued onto "Ireland's" east coast, right down to the name Dornish, Cornish, etc. Also Cornwall, like Dorne, was historically considered separate to the rest of Britain and had its own language, customs etc.
And people from donegal which is where matches up with dorne sound like they have their own language too. I imagine he didn't want to get bogged down in coming up with a complicated map.
Look at the best fantasies - they have simple, uncomplicated maps, like Lord of the Rings. I mean, that is what makes the Riverlands an analogue for the Midlands, and London, as King's Landing.

I'll give you that. There isn't a perfect fit, or even a good fit. Their industry, finance and trade is underdeveloped.
They have very few cities when compared to late medieval Europe, and those cities lack self-government, universities and a vigorous merchant class.
And the role of the Faith is much less important than that of the Catholic Church. Westeros isn't just Great Britain, but a mix of European countries.
The Iron Islands have a strong Scandinavian vibe. The North is kind of Scottish as seen from England. The Riverlands remind me of the Rhine region.
Dorne is basically a mix of Walles because of the way it joined the Seven Kingdoms and Spain with a bit of other Mediterranean countries. The Free Cities are basically the Italian city-states Venetia, Florence, Genoa with a bit of the Low Countries, Tire and some other merchantile mediterranean countries.
However, none of those is a perfect fit. None of the regions are copycats to real countries. Further east there is not a good fit for any country.

Westeros was divided into several independent kingdoms before the start of Aegon's Conquest. After this war and the eventual incorporation of Dorne, all the regions south of the Wall were united under the rule of House Targaryen into a nation known as the Seven Kingdoms , which consists of nine provinces.
The northernmost region of Westeros, the lands beyond the Wall stretch north to the lands past the edge of the known map, known as the Land of Always Winter.
For the most part it is covered by the haunted forest and comprised of many lakes and rivers, and it shelters strange beasts among the mountains of the Frostfangs.
The far north presents an extremely harsh climate, allowing only small numbers of free folk in small villages, in those primarily wild and uncharted lands.
Martin has stated that the lands beyond the Wall make up a large part of Westeros, being roughly as large as Canada.
The north is the largest region, nearly as large as the rest of the regions combined. It is sparsely populated, with vast wilderness, forests, pine-covered hills and snowcapped mountains, although it also is home to one of the five Westerosi cities, White Harbor.
The northern climate is cold and harsh in the winter, and occasionally it snows even in the summer.
Its northern border is the Gift , the lands of the Night's Watch. Its southern frontier lies along the Neck , a marshy isthmus separating it from the southron kingdoms.
The narrowness of the region and the difficulty of the terrain make it a natural border for the north, protecting it from invasion.
It has been ruled by House Stark from Winterfell , first as Kings in the North and later as Wardens of the North , for thousands of years.
It is colder and much less populated than the south part of Westeros. Most of its residents still follow the old gods , but some, mainly around the area of White Harbor, have taken the Faith of the Seven.
Bastards in the north are given the surname Snow. The soil is infertile, but there are mines of several types, including iron and lead.
The inhabitants of the harsh archipelago are known as ironmen in the rest of Westeros, and the ironborn among themselves.
Prior to the arrival of Aegon the Conqueror , the ironmen ruled over the riverlands and, thousands of years ago, over much of the western coast of Westeros.
The ironmen are men of the sea, and their naval supremacy was once unmatched. The Faith of the Seven of the Andals find small favor with the ironborn, as their allegiance is given to their native Drowned God.
Bastards in the Iron Islands are given the surname Pyke. They are the domain of the Tullys of Riverrun.
The Tullys were never river kings , but were rebel river lords who left Harren the Black in favor of Aegon the Conqueror.
Although the riverlands lack a city, they have many large towns, such as Maidenpool and Fairmarket. People of this region are often called "rivermen".
Bastards in the riverlands are given the surname Rivers. The Vale lies to the east of the riverlands, surrounded almost completely by the Mountains of the Moon.
It consists of vast mountain ranges with the people living in valleys between them, such as the Vale proper , and along the coast.
The Vale's territory also includes the city of Gulltown , the Fingers , and numerous islands in the Bite and along the narrow sea.
Their seat, the Eyrie , is a castle high in the mountains, small but unassailable. Due to the Vale's harsh winters, travel is only possible through the mountains during certain seasons.
Rebellious mountain clans make travel even more dangerous. Bastards born in the Vale are given the surname Stone.
The westerlands are the lands to the west of the riverlands and north of the Reach. It is a smaller region, but is home to some of the richest gold and silver mines on the continent.
People of this region are often called "westermen". Lannisport , lying near Casterly Rock, is the chief settlement of the region and one of the great ports and cities of Westeros.
Bastards in the westerlands are given the surname Hill. Look at the best fantasies - they have simple, uncomplicated maps, like Lord of the Rings.
I mean, that is what makes the Riverlands an analogue for the Midlands, and London, as King's Landing. Everything else is a little more off, and I'm perfectly happy to say that what OP showed is far more accurate.

Westerlands are England for me, very proud and surprisingly powerful for the size. A fair bit of chivalry but not too much, Black Prince and his very Tywin esque rampages through France.
So also Reach is France. I agree with your list with the exception of the Westerlands, they are more likely an analogue for California think '49ers gold rush and thier inordinate representation in the US electoral college than any place in Europe, as was said in StagParty's Post.
Worth noting though although I'm sure you had this in mind , that westeros itself excluding beyond the wall is probably only around the size of Britain, maybe a little bigger, and therefore Martin seems to have compressed the different aspects of european lands that you've mentioned above into one isle.
Its a common flaw with fantasy writers that they try to compress vastly different landscapes into a small area of land, creating a diversity that doesn't often exist in real life.
I suppose the sheer length of Westeros north to south makes up for this slightly, and the unnatural nature of the seasons make other aspects of geography more plausible.
And perhaps Martin took this into account when creating his world and deciding on the irregularity in the seasons, because no landmass in real life extends far enough across the globe for it to be snow and ice up north and virtually desert down south.
Actually, it's supposed to be the size of southern America according to GRRM , so there's room for a lot of different landscapes.
Not sure how to present the Westerlands. It's basically defined by its gold and wealth, so maybe California.
England is a possibility too, it's a small country, centralized and powerful compared to its size. I also considered Northern Italy Lombardy for example because that's where the money was in Europe in the Middle Age, but again, Italy and it's various Republic cities have more in common with the free Cities.
Mr Smith, it's commonly believed that Westeros is approximately the size of South America, so there is plenty of room for diverse climates and biomes.
In Real Life, North America is snow and ice up north alaska, northern canada and virtually desert down south Mexico's Sonora and Chihuahua and the Mojave.
Iceland was settled towards the very end of what's usually called the "viking" age, that is the late 9th century. As such they were too busy settling that rather large, uninhabited island to go on any kind of reaving or pillaging.
The "primitive" democracy among other things, such as language was a common trait in scandinavian culture, which just happened to survive with fewer changes in Iceland due to it's relative isolation.
The thing to keep in mind when talking about "vikings" is that there were very small differences between the Scandinavian people, and it is likely that they themselves made little difference between people from different parts of the region.
Indeed, the Scandinavian nations were barely starting to form at this time period Denmark some time in the 8th century, Norway in while Sweden can arguably be considered consolidated from around Even after that, nationalism took a long time to develop and people generally didn't think of themselves as "Swedes" or "Norwegians" until centuries later.
The Iron Islands then, is more of your usual "pagan norsemen" stereotype, and thus can't be equated with any real historical people, as much as they are the "Norsemen" as seen from the POV of the Franks and English who were being raided.
While they share some predominantly the "negative" as seen from a modern POV traits of the Scandinavian people, other traits such as the flat powerstructure and relative equality is displayed more prominently in the wildlings.
Iron Isles are indeed a stereotype that didn't really exist in the real world, Vikings are the closest thing to it. But while Vikings did some raiding, they were also traders, while Ironborn are ashamed to pay "the gold price".
I mentionned it because Iceland was very poor and remote in the Middle Age and because Icelanders have some Viking ancestry as well as Irish ancestry , but they were no raiders as far as I know.
Besides, like the Iron Isles, Iceland was a world on its own back then with different sets of rules as the continent.
There are two ways to look at Westeros: America shoved up against Eurasia or a Britian swollen to continental proportions, both have thier merits and flaws.
